Banana Bread.


Banana Bread
  • 175g (6oz) S.R. flour
  • 75g (3oz) soft brown sugar
  • 75g (3oz) soft margarine
  • 3 Bananas
  • 25g (1oz) chopped walnuts or apricots
  • 3 fluid oz of milk
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda


Pre-heat the oven to 190 deg C, 375 deg F, gas mark 5.
  • Sift the flour, baking powder and bicarb of soda
  • In a small bowl mash the bananas and add the lemon juice
  • Cream the butter and sugar together until they are light and fluffy
  • Add the eggs one at a time
  • Add the milk, mashed bananas, nuts or apricots
  • Pour the mixture into a greased 8 inch cake tin or a 2lb loaf tin and bake for 20 - 30 minutes
  • Allow to cool
