Cherry Truffles

Cherry Truffles.


Recipe

  • 2 tablespoons of apricot jam
  • 25g (1oz) icing sugar
  • 25g (1oz) cocoa powder
  • 50g (2oz) plain cake or biscuit crumbs
  • 1 teaspoon brandy, sherry, rum (optional)
  • 12 Glace cherries

Method


  • Place the jam and half the icing sugar and half the cocoa powder into a basin and mix well.
  • Add the crumbs and brandy, sherry or rum if required, or you could use a few frops of orange juice, mix together.
  • Divide the mixture into 12 equal portions and roll around each glace cherry.
  • Place the remaining icing sugar and cocoa powder on a flat dish and roll the truffles into it. If necessary coat them twice.
  • Leave until firm and place into petite four cases.
