Recipe
2 tablespoons of apricot jam
25g (1oz) icing sugar
25g (1oz) cocoa powder
50g (2oz) plain cake or biscuit crumbs
1 teaspoon brandy, sherry, rum (optional)
12 Glace cherries
Method
Place the jam and half the icing sugar and half the cocoa powder into a basin and mix well.
Add the crumbs and brandy, sherry or rum if required, or you could use a few frops of orange juice, mix together.
Divide the mixture into 12 equal portions and roll around each glace cherry.
Place the remaining icing sugar and cocoa powder on a flat dish and roll the truffles into it. If necessary coat them twice.
Leave until firm and place into petite four cases.
